I block good quality Greek feta
2tbs Greek yoghurt
Zest half lemon
I - 2 minced garlic clove ( up to you )
Olive oil 1-2 tbs
Black pepper
1 handful of pine nuts
Fresh mint leaves
1/4tsp chilli flakes
In a food processor blitz the feta yoghurt and garlic and about 8-10 good sized mint leaves then gradually add the olive oil until the dip is smooth. . in a pan dry fry a handful of pine nuts til golden all over . season the dip with pepper and sprinkle on the nuts, a handful of fresh chopped mint leaves and a sprinkle of chilli flakes serve with toasted pittas, ciabatta and crunchy summer vegetables artichokes olives and meats of your choice ..
