Tomato & roast garlic bruschetta slices

1 homemade ciabatta ( see my recipe)

olive oil

1pack cream cheese

1 garlic bulb sliced in half

8-10 assorted tomatoes halved

Salt pepper

Balsamic glaze ( or vinegar if you don't have glaze)

Chopped chives for garnish


Place the tomatoes and halved garlic bulb on an oven tray or dish, drizzle with olive oil season and roast in a hot oven til the tomatoes are caramelised and the garlic softened 15- 20 mins. Set aside to cool. Thinly slice the ciabatta brush both sides with a little olive oil, season lightly and place in a hot oven 10 mins it so til golden and crisp, Then set aside to cool.

In a bowl squeeze the roast garlic out of the bulb, add a tub of cream cheese season with salt and pepper and a little of the olive oil and blitz til smooth and creamy . Roughly chop the larger tomatoes then assemble . Spread a spoonful of the garlic cream cheese on each slice, add some tomato, dot with a little balsamic glaze, sprinkle with chopped chives add a little more cracked black pepper and serve ..
