1/2 cucumber peeled & halved
2-3 spring onions finely chopped
1bunch coriander chopped
1pack cooked king prawns
1chilli deseeded & finely chopped
1tbs yuzu juice
2tsp nam pla ( fish sauce)
A little palm sugar or brown caster sugar
1 handful dry roasted peanuts
8-10 Ceramic Chinese soup spoons
deseed the cucumber using a tsp then chop finely and mix well the a handful of chopped coriander leaves and the chilli in a bowl . In a jar mix the dressing - taste and adjust seasoning to your preference.
Load a little of the salad into each of the spoons, top each with a prawn then drizzle each with a little dressing. Crush the peanuts in a pestle and mortar then Sprinkle each prawn with some peanuts before serving on a slate tray of wooden board along with chilled glasses of Prosecco
