6-8 chicken thighs ( skin trimmed)
2tsp runny honey
juice 2 limes
olive oil
1/4 tsp chilli flakes
2 minced garlic cloves
salt pepper
chives or spring onions to garnish
pat the chicken dry before frying in a pan skin side down to colour 3-4 mins both sides, then remove and place in an oven proof dish season the skin with salt and pepper. mix the honey garlic chilli and lime juice in a jar pour over the top and roast in a hot oven 25- 30 mins or so ( or until juices run clear from the meat) serve with chopped spring onions or chives and creamy Parmesan mash -
