Spiced Winter vegetable curry

1-2 tbsp chilli oil

1 small cauliflower

1/2 small marrow

1 small squash.. or use half and add some sweet potato too )

1large onion

2 garlic cloves

1 tsp roast curry powder

1tsp cumin

1 tsp minced fresh ginger

1 tsp turmeric

1/2 cardamom

1 heaped tsp tomato paste

1handful cherry tomatoes

1can coconut milk

1 canful chicken or vegetable stock

1tsp garam masala

1squeeze lemon

A bunch chopped coriander

1-2 tbs Greek yoghurt

1 handful unsalted pistachios chopped


Add oil in a pan and quickly fry the chopped onion then add the minced garlic, ginger then the spices and fry quickly to release the aromas. Add the cauliflower the squash and marrow move around the pan to coat. Now add the chopped tomatoes and the paste then the coconut milk and stock bring to a simmer and cover to cook gently until the vegetable are cooked ( not mushy) . Season to taste add a little squeeze of lemon stir in a little of the Greek yoghurt and serve with more dollops of yoghurt, chopped coriander and a sprinkling of crushed cashews on a bed of basmati rice or with warm pittas ..
