Simple Tomato Sauce

1 can chopped tomatoes

2-3 minced garlic cloves

1tsp capers finely chopped

1 bay leaf

1/2 tsp dried oregano

1-2 pinch of chilli flakes

1/2tsp sugar

Olive oil

Salt pepper

Heat 1 tbs olive oil and gently fry the garlic ensuring it doesn't burn, add the can of tomatoes and using the can 1/2 again of water add the herbs chilli bay leaf sugar and season with salt and pepper and allow to gently simmer for 20- 35 mins and reduce slightly. Scoop out the bay leaf then blitz smooth taste and adjust seasoning to your preference. Cool and keep in a sterilised airtight jar in the fridge.
