Simple Thai red curry

1 can coconut milk

Sesame oil

450g beef steak cut into slices

1red 1 yellow pepper

1large onion sliced

1tbs red curry paste

1tbs palm sugar

1tbs nam pla ( fish sauce)

Lime juice plus limes for serving

Handful fresh coriander

1 fresh red chilli chopped

2-4 crushed Brazil nuts for garnish

Slice the onions and peppers, add a dash of sesame oil to a wok or pan and quickly fry for a couple of minutes. Add the paste fry again then pour in 1/2 coconut milk and simmer 5 mins. Add the beef, the nam pla the palm sugar and a little lime juice simmer another 5 mins then the rest of the coconut simmer a further 5 mins then serve with lots of fresh chopped coriander lime slices some fresh chilli slices and and a sprinkle of crushed Brazil nuts
