400g minced beef
400g minced pork
1 large egg beaten
75 g fresh breadcrumbs soaked in a little milk
1tbs capers chopped
1tbs ground allspice
Zest 1/2 lemon
Salt pepper
25g butter
1tbs flour
300ml good quality beef stock
2tbs crème fraiche
2tbs cranberry jelly
Chopped dill
4tbs lingonberries or cranberries
In a bowl mix the pork beef egg breadcrumbs capers allspice 1 tbs dill, lemon zest and seasoning then roll into walnut sized balls & fry til golden and cooked through in a little oil. Remove meatballs from saucepan add a knob butter to pan & 1 tbs flour scrape and mix well, pour in stock slowly mixing to make the sauce add in the crème Fraiche and jelly and 2 tbs berries, simmer to thicken add back the meatballs simmer to coat and serve on steamed seasoned rice with fresh chopped dill and black pepper
