Scandi style potato Salad

Boil and peel 1kg of new potatoes. In a bowl mix 3tbs Greek yoghurt 3tbs mayonnaise 2 chopped cooled boiled eggs 2 tsp grained mustard 2tbs finely chopped dill 2tbs finely chopped parsley 1bunch finely chopped spring onions 8-10 finely chopped cornichons a good glug olive oil season well with salt and pepper 1/2tsp caster sugar 2tsp white wine vinegar mix well taste and adju seasoning to your preference, mix with the warm potatoes garnish with parsley & serve with charcuterie bbq meats and salads
