400g salmon fillet cut into chunks
1 small mango stoned and chopped
1can coconut milk
1 large white onion sliced
1dessert spoon of coconut oil
1 tsp ginger paste
1tsp chilli paste
1tsp coriander powder
1tsp turmeric
2 dried chillis ( optional heat)
1tsp curry powder
1tsp nam pla ( or soy )
2kaffir lime leaves
1tsp brown sugar
Juice of 1 lime
Fresh coriander to garnish
Sticky boiled rice , a handful of toasted crushed pistachios, a handful of cooked green beans and some warm naans to serve.
Heat the coconut oil fry the onion til translucent. Pour in the coconut milk bring to a simmer add the rest of the ingredients and simmer gently 15-18 minutes lid on , taste adjust seasoning then serve with sticky rice chopped green beans sprinkle on the pistachios and chopped coriander and scoff with warm naan breads.
