Roast Butternut Squash & Gorgonzola Tart

I’m thinking quick lunch here !

peel chop and cube a squash and thow into an oven tray with a couple of sliced Spanish onions and a couple of garlic cloves ( skin on) drizzle with a little chilli oil or olive oil a few sprigs of chopped thyme leaves with a good pinch of chilli flakes mix well and roast in a hot oven 220c 15 mins til tender. Grab a packet of puff pastry the ready rolled one (life’s too short to make the stuff!) unroll it, score with a 1cm border all the way around then prick the middle all over with a fork. take the squash from the oven, chop the onions a little more, squeeze The garlic bulbs out and mash then slightly them with the squash before emptying the lot on to the pastry case and spreading around the middle. Crumble 1-2 handfuls of Gorgonzola over the top and around the sides. brush the edges with egg wash and bake 20 mins or so til golden and bubbling. Serve scattered with thyme springs or rocket leaves and devour with a chicory salad with balsamic vinaigrette..
