Quick Southern style crispy Chicken

6-8 chicken thighs skin removed

250g fresh breadcrumbs

1tsp smoked paprika

1//tsp garlic paste

1tsp dried oregano

250ml mayonnaise

1tbls smooth Dijon mustard

Salt pepper

Lime wedges to serve

Preheat your oven to 180c and lightly oil a baking tray. In a bowl mix the mayonnaise the mustard the garlic and the smoked paprika together , in another mix the breadcrumbs the oregano and season well with salt and pepper. Dip each chicken thigh in the mayo first ensuring they're well covered then roll them in the breadcrumbs before placing onthe baking tray. Bake for 25-30 mins or until golden and crisp all over - serve lime slices and a mango and red onion salad or a fresh tomato salsa
