1.4kg silverside beef
2crushed cloves garlic
2 onions Sliced
2-3 celery stalks chopped
2-3carrirs peeled and chopped
25g plain flour
2-3 tbs olive oil
150ml tomato juice
150 ml beef stock
1tbs Worcester sauce
1tsp oregano
1-2 thyme sprigs
2tsp salt
1 bunch fresh chopped parsley with the stalks removed and chopped
Black pepper
Season the flour well and scatter on a plate. Rub the beef all over with the crushed garlic then lightly roll in the flour. Heat the oil in a casserole and quickly fry, browning all over .
Set aside and fry the vegetables and the finely chopped parsley stalks in the casserole using a little more oil if necessary then replace the beef pour in the stock tomato juice Worcester sauce dried herbs a handful of finely chopped parsley the seasoning, bring to the boil add the lid and allow to simmer gently for around 3 hrs or so until the meat is tender ( turn the meat every so often) - if cooking in an Aga pop into the simmering oven. remove the beef. cover and keep warm. Blitz a few spoonfuls of the vegetables ( - or more for a thicker sauce it's it's up to you) add to the rest in the casserole then simmer, taste and adjust seasoning add more chopped parsley and serve with the meat alongside duck fat roasted potatoes and buttered green beans
