Pork Apricot & Tokaji stuffing

1 large white onion finely chopped

1-2 celery stalks finely diced

1knob butter

4 roughly chopped bacon rashers

450g good sausage meat

75g chopped dried apricots

200g finely chopped chestnuts

150g fine breadcrumbs

Zest of an orange

1large handful chopped parsley

1large egg beaten

1/2tsp dried sage

2- 3tbs royal Tokaji ( or brandy )

A little water as needed

Salt pepper

Fry the onion in the butter with the celery abd bacon until translucent, add the sage and mix well - set aside to cool . Mix the ingredients together in a bowl using your hand to 'squish' to bring it all together add a little water if necessary then press down into a buttered ovenproof dish ( it can be frozen at this point ready for Christmas Day ) then bake @200c 30 mins until golden and fragrant..
