Panettone Pudding with winter berries and Punsch

I Italian panettone

500g frozen berry mix

1small punnet fresh blueberries

3 eggs

Butter for greasing

300 ml double cream

300 ml crème fraiche

1tbs caster sugar

75 ml whole milk

2-3 drops of vanilla extract

175g good white chocolate

2tbs Swedish Punsch ( or brandy)

Heat your oven to 170c. Chop the Panettone into chunks and place 2/3 into a buttered dish. Sprinkle with 2/3 of the frozen fruit and blueberries , drizzle with the liqueur and sprinkle with 2/3 of the white chocolate. Create a top layer with the panettone, the fruit and tuck the remaining chocolate into the top layer. Whisk the eggs cream crème fraiche milk and vanilla together with the sugar pour all over the top and press the panettone into the liquid. Bake 35-45 mins or until set and slightly golden . Serve with double cream or icecream
