Miso prawn and vegetable broth

500ml fresh chicken stock

1pack miso paste

200ml boiling water

1 thumb sized piece peeled chopped ginger

1pack baby broccoli or broccoli florets

1chopped pak choy

2-3 chopped shiitake mushrooms

2-3 chopped spring onions

1pk cooked ready to eat king prawns ( or cooked chicken )

Other veg of your choice baby courgettes spinach bean sprouts etc

Handful dried noodles

Soy sauce for seasoning

Bunch fresh coriander

a small red chilli or a generous pinch Chilli flakes

Lime slices

pour the stock to a saucepan and gently heat . Add the miso paste to the boiling water stir well add to stock and allow to bubble. Add the chopped ginger and veg and allow to simmer a few minutes more to soften. Throw in the prawns the chilli or the chilli flakes and the noodles Simmer a little more til the noodles are softened then season to your preference with soy - taste and garnish with chopped coriander and lime slices.
