In a bowl mix a handful of walnuts with 1/2 tsp cinnamon & 1tsp honey. spread on a baking tray and toast in a hot oven 8-10 mins til caramelised.
Chop and Mix green leaves of your choice, cos romaine gem anything crunchy or sharp , a thinly sliced Granny Smith and half a diced cucumber, 1/2 small thinly sliced red onion a handful of chopped coriander leaves and using a sharp knife segment an orange so you just have the flesh not the pith, mix the segments into the leaves. In a jar mix 1tbs olive oil a splash of fresh orange juice and 1/2tsp Dijon mustard a pinch of all spice, salt pepper and a splash of white wine vinegar. pop the lid on and shake. adjust seasoning and set aside. heat a pan and add a little dash of chilli oil then fry a sliced block of Halloumi til golden and crisp on both sides. pile on top of the salad, sprinkle on a handful of chopped fresh mint leaves some pomegranate seeds the caramelised walnuts and drizzle on some of the dressing before mixing and serving.
