These little pots of deliciousness are so easy to make. You’ll need 4 small flowerpots mine are just over 3” high.
brush the insides with olive oil, line with baking paper then brush again lightly. in a bowl mix 400g strong white flour with 1 tsp salt. in a measuring jug weigh 350 ml warm ( not hot) water and mix 1.5 tsp fast action yeast in. pour into the flour and bring together with a spatula to make a rough dough. Cover the bowl with cling film and leave in a warm dry area til dough doubles in size. ( 2 or more hrs) tip the dough out onto a floured surface sorinkle 2-3 tbs chopped fresh chives and generously grind some pepper on top then knead gently to mix evenly, before forming a ball and cut into 4 quarters. Mold these into 4 balls and drop them into the pots, cover with a damp cloth and leave to rise again for at least 1hr . Sprinkle tops with some chopped thyme leaves and a little flour and bake in a hot oven 230-240c for 25-35 mins until golden on top and the bottoms sound hollow when tapped. Allow to cool and serve in the individual pots ..
