King Prawn & chilli pasta

200g pasta

2tbs olive oil

1/2 finely sliced onion

1pack king prawns

1 red chilli deseeded & finely sliced

2 minced garlic cloves

8-10 cherry tomatoes quartered

2-4 tbls homemade passata

Handful chopped parsley

Salt pepper


Boil a pan of water add 1tbs olive oil and salt and cook the pasta til al dente. Drain but retain some of the water. Add olive oil to a pan and fry the onion til translucent for a few minutes . Squeeze the chopped tomatoes drain away the excess water then add them to the pan with the garlic and chilli and fry fir a minute or so then add the prawns for another minute then the passata. spoon a little of the pasta water in, swirl and reduce til you have a light sauce. Add the cooked pasta to the pan to heat through , season then serve sprinkled with chopped parsley and lots of black pepper.
