This is another super easy Chuck it together midweek meal with stuff you’ve got in your store cupboard - ( if you don’t want the wine swap it with chicken stock !
Remove the skins from 5-8 good quality pork sausages season well with salt and pepper and roll into little walnut sized balls. Heat a little olive oil and fry the balls until they’re browned all over then remove from the pan. chop a large onion and fry til translucent add 2 crushed a garlic cloves, stirring to get the sticky bits , replace the meatballs , then add a can of chopped tomatoes, 1/4 can of water a drained can of chickpeas peas and 150ml red wine & stir. Add 1tbs tomato purée 1/2tsp chilli paste ( or a good pinch of chilli flakes) 2 bay leaves and a handful of fresh chopped thyme (or a generous tsp dried thyme) pop the lid on and allow to simmer gently for 30 mins til the sauce is rich and thick. Serve with grated parmesan, crusty warm bread and a big mixed salad with green leaves, avocado green beans asparagus sweet corn or whatever else you fancy and a simple balsamic drizzle ..
