1can chickpeas rinsed and drained
2 finely minced garlic cloves
3tbs tahini paste
Juice and zest of I lemon
Salt pepper
1-2tsp cumin seeds toasted in a pan & finely ground
olive oil
50-60ml water
Blitz the chickpeas with the water til chunkily smooth then add in the lemon juice zest garlic tahini paste a little more water salt pepper and a dash of olive oil and blitz til creamy smooth. Taste and adjust seasoning , add a little more water if the dip needs to be looser. Add a couple tsp cumin seeds to a hot pan and dry fry a few mins to release the aromatic flavour. Crush in a pestle and mortar then Stir in 1/2 tsp ground cumin and dollop into a bowl or serving dish . serve with pitta or warm crusty bread , and sprinkle with the rest of the cumin and drizzle with olive oil .
