Herby Spiced Falafels

In a food processor blitz 100g can of chickpeas with 2 crushed garlic cloves,165g cooked quinoa 1 small chopped red onion 1tbs chopped chives and a handful of coriander leaves. slowly add in 2.5 tbs olive oil then transfer to a bowl. Add 4 tbs ground almonds 1/2 tsp chilli flakes 1tsp ground cumin 1tsp ground coriander 1/2 tsp baking powder season well with salt and pepper bring together ( adding a little more oil if necessary ) shape into Ping pong sized balls on a lined baking tray and chill 1/2hr before brushing with a little oil and baking @180c for 25 mins until golden, serve with hummus drizzled with olive oil lemon zest and paprika
