French Onion Soup

30g butter

300g onions thinly sliced

1tsp soft brown sugar

2tsp plain flour

200ml white wine

1.5 lts good quality beef or chicken stock

Sliced homemade bread or baguette

150g finely grated Gruyère

Parsley chopped

Squeeze of lemon

Salt pepper

Ciabatta ( see my recipe )


Heat the butter in pan. fry onions with sugar 15mins til caramelised and golden. Stir in flour and cook then add the wine a bit at a time stirring, then add the stock. Simmer 15 mins, season taste and add a little squeeze of lemon juice if necessary.

Bake the baguette slices or sliced ciabatta in oven til crisp for a few mins . Pile slices with Gruyère and bake til cheese melts then dish up soup, add the toasted cheese slice on top. season with pepper and sprinkle with chopped parsley.
