Feta & chilli tomato Pasta

Heat your oven to 230c create a foil tin on an oven tray and place 6-8 cherry tomatoes a and a block of feta in , drizzle with a little runny honey, a good grind of pepper some thyme leaves and 1-2 crushed garlic cloves then drizzle the lot with some chilli oil ( or olive oil and a good pinch of chilli flakes) . Pop in the oven to bake whilst you cook off some pasta in salted boiling water. When the pasta is ‘Al dente’ drain and retain a little of the water . Once the feta is bubbling and golden on the edges and the tomatoes cooked, empty into a heavy bottomed pan crush the garlic cloves to a paste add the pasta and swirl the melted cheese and to stir through adding a little pasta water a little at a time until you have a rich creamy sauce. Season with pepper and garnish with finely chopped basil and parsley..
