Easy Strawberry Ice Cream

500g washed chopped strawberries

3tbs caster sugar

A good squeeze of lemon

200g condensed milk

500g double cream

100g Greek yoghurt

1tsp vanilla essence


Put the strawberries sugar and lemon juice in a pan and cook for around 10 -15mins or so (make sure the sugar doesn’t catch) allow to cool then blitz half the mix smooth and then fold in the strawberry chunks .

Whip the cream yoghurt essence and condensed milk together to peaks then fold in the strawberry mixture. Pour into a freezable container or loaf tin and cover with cling film or lid- freeze at least 4 hrs -remove from freezer 10 mins before serving.
