4 large eggs
140g plain flour
200ml milk
Salt pepper
Goose /duck fat or beef dripping for pan
Heat you oven to 220c .
Whisk the 4 eggs together til frothy then add in the flour mixing gently then slowly pour the milk in mixing as you go until you have a smooth silky batter. Season well with salt and pepper, cover and leave to chill til at least 1/2 hr until needed.
Spoon a little dripping into a each muffin tray and pop the pan into a hot oven for a few minutes until smoking . Remove and using a ladle or jug , spoon a little of the batter into each muffin case ( don't fill to the top ) , before popping back in the oven and baking for 25mins or so or until risen and golden.
