700g new baby potatoes ( less or more depending on how many you want to serve )
2 -3 tbs butter
1tbs olive oil
3 -4 smashed garlic cloves
3 tbs finely grated Parmesan
Seasalt ground black pepper
A Handful finely chopped fresh mint leaves
Boil the potatoes in salted water til nearly cooked but still retaining some firmness. Cool slightly then using the bottom of a glass, press each potato gently to crush ( but not flatten. ) in a bowl melt the butter add the oil the crushed minced garlic and half the finely grated Parmesan, mix then lay the potatoes in an oven tray season well and liberally brush each potato both sides with the mix. Roast in a hot oven for 10-15 mins removing half way turning and sprinkling on the rest of the Parmesan. Cook til golden and crispy . To serve sprinkle with chopped fresh mint or finely chopped parsley.
