Creamy smoked salmon with spaghetti & herbs

250g ethically sourced smoked salmon cut into strips

350 g Spaghetti or any pasta

2 finely chopped shallots

2 minced cloves of garlic

2bls olive oil

450ml crème fraiche

handful fresh chopped chives ( or dill)

1tbs chopped capers

Zest of small lemon

2-3 tbs Parmesan

Salt pepper

Pasta water ( retained )


Boil a pan of salted water and cook the pasta according to instructions, drain but retain some of the water back .

In a saucepan gently fry the onion and garlic in the oil til translucent (not browned) stir in the crème fraiche capers and 2 spoonfuls of Parmesan. Now add 2 ladles of the pasta water and gently reduce them add the lemon and the salmon then the pasta stir through season with salt and pepper and serve sprinkled with chives
