500g fresh cranberries
Juice and zest of 1 orange
100ml water
1 cinnamon stick or 1tsp cinnamon
75 ml port
250g caster sugar
Pop all ingredients into a heavy based pan bring gently to a rolling boil and simmer til the cranberries pop. Mash a little as you stir allow to reduce to a 'jammy' texture . Remove from heat, cool, decant into a sterilised jar and keep sealed til Christmas Day .
