2 medium courgettes
3 medium eggs beaten
400g plain flour
1/2tsp baking powder
1tsp bicarbonate soda
1/4 tsp mixed spice
1 tsp cinnamon
200g soft brown sugar
1tsp vanilla extract
200ml sunflower oil
75g lightly crushed walnuts ( plus extra half walnuts for decorating)
75g mixed seeds
50g dried cranberries
Generous pinch of salt
Butter for greasing
Lightly grease and flour a 2lb loaf tin. Grate the courgettes then wrap in a tea towel and squeeze out all the excess water . In a bowl, Sift in the flour the baking powder salt spices and the soda, stir in the courgettes then all the rest of the ingredients until well mixed together pour the batter into your prepared tin, dot with walnut halves and bake 180c for around 1hr or until skewer comes out clean from the centre..
