In a bowl mix 400g strong white flour with 1/4tsp dry yeast 1.5 tsp salt slowly add in 350ml water gently bring it together then cover with cling film and leave to rise and bubble in a draught free warm area, over night 18-20 hrs.
Using a spatula gently tip out onto a lightly floured surface, it’ll be sticky so lightly sprinkle on some flour and using a dough scraper fold over onto itself 4 times making a half turn as you go. Replace in the bowl and cover again- leave to double in size ( another 2hrs or so) . Tip out again onto a lightly floured surface and cut in half. flour your hands and gently shape/pull into 2 ciabatta shaped loaves and lay on a lined baking tray. Brush with olive oil and sprinkle with seasalt then Cover with a damp cloth for 20 mins. finally sprinkle with a little flour before baking in a hot oven 230-240c for 20 mins until golden brown and risen
