60g cocoa powder
60ml vegetable oil
300g caster sugar
2 large eggs
A couple drops vanilla extract
180g plain flour
1tsp baking powder
A couple tbsp icing sugar on a plate
A pinch of salt
Preheat your oven to 180c .
In a bowl whisk the cocoa powder with the oil and the caster sugar then add the eggs whisking as you go and the vanilla essence. Sift the flour in slowly add a pinch of salt then stir until a soft dough forms. Place in the fridge for at least 2 hrs or so then scoop out ping pong sized balls of dough and roll in the icing sugar before placing on 2 lined baking trays 1inch apart. Bake at 180c 10-12 minutes before cooking on a wire rack .
