Cheddar onion and fennel soda bread

450g plain flour ( + flour for dusting )

15ml baking powder( 1 level tbs)

1/2tsp salt

3/4tsp bicarbonate soda

50g butter cubed

1tbs olive oil

1heaped tsp fennel seeds

1small onion finely diced

100g mature cheddar grated

150ml semi skimmed milk

150ml Greek yoghurt

2 small eggs whisked

Heat the oil in a pan and gently fry the onion and fennel seeds until onion softens. Set aside to cool.

In a bowl sift the flour salt bicarbonate baking powder. Using your fingers rub in the butter cubs thoroughly then add in the cooled onion mix and the grated cheddar ( keep a little cheddar back to sprinkle before baking ) Mix the milk and yoghurt together whisk in the eggs then pour into the flour and gently bring together to make a loose dough. Tip onto a floured surface and gently knead around 10-15 times to form a smooth round dough. Sprinkle a little flour in a heavy casserole pot. Add the ball of dough, flatten slightly and make two cuts along the top. Sprinkle on the remaining cheese then bake in a hot oven 220c for around 30 - 40 mins til risen and golden and sounds hollow when you two the bottom .. then tip out to allow to cool ..
