2tbs Olive oil
1 cauliflower cut into florets
any extra veg you fancy ( a pepper, a carrot, squash chopped small 1/2 can chickpeas etc ..)
1pack paneer cubed
1large onion finely chopped
1tsp minced ginger
1/2 tsp turmeric
1/2 tsp ground coriander
1garlic clove crushed
460g passata
1small 165g tin coconut milk ( and water as needed)
2tbs tikka masala paste
150g frozen peas
bunch Fresh coriander
Salt pepper
A little lemon juice
Rice and naan to serve
Fry the paneer in a little oil all over til golden, set aside then fry the cauliflower florets til coloured, set aside. Fry the onions and garlic til translucent add the cauliflower and paneer stir in the paste and fry quickly then tip in the passata the coconut the spices the veg and peas, allow to simmer ( add a little more water if needed) simmer until the cauliflower is tender and the sauce has thickened. Season to your taste and add a little squeeze of lemon Garnish with lots of fresh chopped coriander before serving
