Caperberry vodka & smoked salmon farls

3 large baking potatoes

100g plain flour

1tsp bicarbonate soda

75 g melted butter +extra for greasing.

Salt pepper

1/2 aprox tub of. cream cheese

2tbs fresh chopped chives

1tbs crème fraiche

2-3tsp vodka

1tsp hot horseradish

Salt pepper

2packs smoked salmon

A bunch of dill fronds

1/2bottle of caperberries

Butter and line a 31 x23 baking tray .Prick and bake the potatoes in a hot oven till crisp and cooked though, set aside to cool, then scoop the potato out into a bowl. ( save the skins, and chop and re bake til crisp and use as potato chips with a dip!) mash well then add 75g melted butter , the flour and bicarbonate then bring together, season well and roll out dough on a floured surface . Lay the dough in the tray and push to edges ( if it cracks pinch together ) then brush the top with a little more melted butter and bake 180c 25-35 mins or until golden brown. Set aside to cool and cut into squares, tidying the edges.

In a bowl mix the cream cheese with the crème fraiche the vodka, horseradish, seasoning and the chopped chives. Dollop a little on each square top with smoked salmon and a dill frond add a caperberry and a final grind of black pepper.
