Buttery Banana & Walnut loaf cake

4 ripe squidgy bananas

200g SR flour

1/2tsp salt

150g butter softened

150g soft brown sugar

1-2 handful crushed walnuts

2large eggs

1tsp vanilla extract


Lightly grease then flour a 2lb loaf tin. Cut your bananas leaving 2 slices for the top of the cake and squidge up the rest.

Sift the flour into a bowl add the salt. in a bowl cream the butter and sugar together til fluffy. Add the vanilla extract and gently mix in the 2 eggs. Gently fold in the bananas and the walnuts then finally fold in the flour and salt until smooth. Pour into the tin add the 2 banana strips on top and bake @170c for around 40 mins or until skewer comes out clean from the middle of the loaf allow to cool then eat smothered in butter ..
