In a bowl mix 500g strong white four with 1.5tsp salt 1tsp sugar 1tsp fast action yeast, mix together then add 1tsp vegetable oil and pour in 300ml of warm ( not hot ) milk. Gently bring together to form a dough and cover bowl with cling film, leave in a dry draught free area for 15-20 mins. Tip dough onto a floured surface and gently knead for 8-10 mins using the heel of your palm until you have a smooth dough then shape into a ball, replace in the bowl cover with a damp cloth and leave in a warm dry area to rise 1.5-2hrs. Tip the dough onto a lightly floured surface and cut into 10-12 pieces, gently shape into balls, place them on lined baking trays and cover with a damp cloth to a final time 40 mins or so before sprinkling with a little flour and baking off @220c for 18-20 mins or until golden brown and risen ..
