Breakfast banana loaf with granola & rye

3 ripe bananas

2 large Eggs

200g self raising flour

50g rye flour

150g soft brown sugar

70g vegetable oil

1tsp baking powder

1tsp vanilla extract

1/2tsp salt

70g Greek yoghurt

150g good quality granola with plenty of nuts and seeds plus extra for sprinkling


Mash the bananas. In a separate bowl mix the flour salt and baking powder. In another bowl whisk the eggs vanilla and sugar til frothy then slowly add the oil followed by the yogurt and finally the mashed bananas mixing gently til combined. Now fold in the flour and finally the granola then pour into a greased lined medium loaf tin and sprinkle with extra granola. Bake @180c 40-45 mins ( turn half way and cover lightly with foil if worried it might burn on top ) check it’s baked by inserting a skewer, if comes out clean from the centre of the loaf - it’s ready. Serve warm slices smeared with melting butter ..
