Banana & oat pancakes with blueberry compote

2 ripe bananas

2medium eggs

80g rolled oats

2tsp baking powder

1tbs Greek yoghurt

1dash vanilla extract

A Pinch of salt

200g punnet blueberries

2tbs icing sugar

Lemon juice

A little water

A little butter and oil to fry

Serves 2


For the compote combine the blueberries a little lemon juice and the icing sugar in a pan and heat gently around 10 mins til blueberries pop and compote is rich and dark . If you want a looser compote add a little water.

For the pancakes throw the banana egg oats vanilla essence yoghurt baking powder and salt into a processor and blitz til smooth. Allow mix to chill then, after adding the oil and butter to a hot pan spoon a dollop of the batter into the pan. As soon as the top bubbles flip it over and repeat then set each pancake aside on a warm plate. Serve with sliced banana blueberry compote and a drizzle of honey or maple syrup ( These pancakes will freeze if you layer with grease proof paper in an airtight container )
