1 large ( or 2 small ) responsibly sourced Salmon Fillet
olive oil
3minced garlic cloves
1onion quartered
1tbs harissa paste
1/4-1/2 tsp chilli flakes
1/2 tsp cumin
A squeeze of honey
Juice I lemon and zest
Assorted winter vegetables peeled chopped leeks squash parsnips potatoes into chunks
2-3 handfuls Baby spinach leaves
Salt pepper
1/4 pack of feta
Chopped fresh coriander
Mix the harissa paste with around 4tbs olive oil the chilli cumin 1/2 the lemon juice and 1/2 the zest a squeeze of honey and season well mix and taste pour half the mix over vegetables, toss well then pour into a roasting tin lined oven proof baking paper and bake 20 mins - remove then place the salmon on top baste with the rest of the marinade, crumble thr feta on the salmon and pop back in the oven 12-20 mins ( depending on the size of the salmon piece or pieces) . Remove the salmon to a warm plate drizzle with a little more lemon. Mix a couple of handfuls of baby spinach leaves with the vegetables making sure they wilt slightly from the heat. Pile onto a dish lay the salmon on top, serve with couscous or crusty bread and sundried tomato hummus
